'Hearty' Beetroot Soup

My 'Hearty' Beetroot soup, with it's rich pink colour, is particularly special for February with it being the LOVE month. Beetroot has numerous health benefits and is so nourishing for the body boosting energy, it protects the heart and brain, cleanses the blood, improves our immunity and boosts circulation! 

Ingredients (serves 4):

  • Olive oil
  • 2 onions diced.
  • 2 cloves garlic diced.
  • 2 carrots chopped.
  • 1-2 celery sticks chopped.
  • 3 medium raw beetroot diced.
  • 1 large raw potato diced.
  • 500ml water to start.

Flavour Release:

  • Sea salt
  • Black Pepper
  • Dash of oregano / sage / thyme / rosemary or herbs of your choice
  • Dash of tamari (gluten free soy sauce)

Method:

  • Heat olive oil in a large saucepan
  • Add the onion, garlic, 1 carrot, celery and sauté of 15 -20 mins in 100ml of water at a low heat.
  • Add remaining carrots, diced beetroot and potato along with herbs / flavourings of your choice.
  • Add your remaining water, bring to the boil, reduce and simmer slowly for 20-30 mins.

Serve:

  • Sprinkle some seeds and add a tbsp of natural yogurt / Greek style or coconut yogurt on top.
