Nothing like good lean leftover turkey in a bake with your favourite vegetables in a light white sauce and your favourite grated cheese on top. A nice quick warming meal over the Christmas season!
INGREDIENTS:
Leftover Turkey
Vegetables of your choice (I used butternut squash / courgette / mushroom)
½ onion
1 clove garlic
25g butter
25g self raising flour
Nutritional Yeast 2tbsp (optional)
200-300ml milk
Hard Cheese for grating
METHOD:
Saute your onion and garlic for 10 mins and set aside
Steam or boil your vegetables for 10 mins until slightly soft
To make your sauce melt the butter in a sauce pan.
Turn down the heat
Add in a little flour stirring all the time to make a paste
Gradually add a small amount of milk at a time, I use a whisk here to beat out lumps
Add enough milk to a nice consistency
Add seasalt / pepper and nutritional yeast if using (this gives an extra cheesy flavour)
Drain the vegetables and add the sauted onion and garlic to the pot .
Add in leftover turkey pieces if using.
Add in the sauce and mix well.
Pour into a dish and top with some grated hard cheese to finish.
Bake for 30 mins until nice and golden
Serve with some steamed greens or have alone
TIPS:
Add potato if you wish to make more filling (leave out for less carbs)
Leave turkey out if you want a vegetable / meatless option
