This is so quick to make , they are tasty and a perfect snack! Leave to cool when you remove from the oven - if the bars crumble use as a granola type sprinkle , can be frozen or stored in a tin. Warning , they disappear quickly!!

Makes 20

Ingredients:

  • 250g porridge oats
  • 160ml of coconut oil
  • 70g milled Chia seeds
  • 160ml of maple syrup
  • 40g desiccated coconut
  • 125g mixed seeds (sesame / sunflower / pumpkin)
  • 40g dried cranberries
  • Dash Sea salt

 

Method:

  • Add all the dry ingredients into a large bowl
  • Melt the coconut oil separately in a saucepan and add to the mixture with maple syrup
  • On a flat baking tray (I used 2 medium trays) flatten out the mix and press down hard so they will set to form bars
  • Bake at 150c oven or equivalent for 35-50 minutes , keep a check so the cranberries don’t burn!
  • Leave for 15 minutes at least to cool before cutting , any crumbly bits make a great sprinkle with yogurt or over porridge !
