Acai Chai Pudding

This is the perfect snack for a sweet tooth as well as a healthy breakfast option. ACAI have almost four times the antioxidant power of blueberries per 100g making it a super superfood! A taste between cacao and blackberries!

Serves 5 (you will need 5 small glasses!)

Ingredients:

  • 100g whole chia seeds (20g per glass)
  • 25g Acai powder
  • 1tbsp maple syrup (You can use another sugar type here) or better still use 1-2 drops of vanilla extract.
  • Dash of cinnamon
  • 360ml of plant milk
  • 1tbsp o% Greek Style Natural Yogurt
  • 1 tsp mixed seeds
  • 1 strawberry sliced or 5 raspberries or 5-6 blueberries.

Method:

  • In a large bowl add the whole chia seeds, acai powder, maple syrup, vanilla extract, plant milk and cinnamon and whisk well.
  • Leave in the fridge overnight if possible.
  • The result should be an acai style mousse.
  • Spoon the mixture evenly over the five glasses.
  • Add 1 tbsp of natural or Greek style natural yogurt.
  • Sprinkle your seeds and berries on top.
  • You can also create layered versions for visual feasting effects! Tip: I used a little beetroot juice in my greek style yogurt for a lovely lilac effect against the purple of the acai , then themed with passionfruit / blueberries / strawberry selection on the top !
